kale salad

I’ve written about kale before, here and here. But I have to do it again, because it’s so darn good and so darn good for you!

I used to only eat kale in the form of kale chips or in soup. I have since branched out and will now eat it in actual salad form, which when done right can be absolutely delicious. I was always afraid to eat it raw because it can be kind of bitter. Then I had a kale salad at a cafe and fell in love.

I found this recipe for my own super simple and easy to make kale salad. And I think I found the trick that makes it not so bitter. Try this salad, it’s so easy, so delicious and so healthy.

Kale Salad with Hemp Seed & Parmesan

What do I need?

+ 1 large bunch of kale, thick stems removed, washed & cut or torn into bite-size pieces (about 12 cups)
+ 3 Tablespoons olive oil
+ Large pinch of coarse sea salt
+ Juice from 1/2 lemon
+ 1/2 red bell pepper, cored, seeded, and finely diced
+ 1/4 cup hemp seeds {I substituted ground flaxseed here}
+ 1/4 cup grated parmesan

**I also added a couple handfuls of dried currants and pine nuts….ummmm amaze. In my opinion this salad needs them.

What do I do?

1. Place the (cleaned and dried) kale in a large bowl. Pour the oil on top and sprinkle with coarse sea salt.

2. Using your fingertips, massage the kale thoroughly for 5 minutes, until the leaves start to soften; the kale will reduce to about half its original volume — it will continue to reduce the longer you massage. {this is the step I’m convinced makes it not bitter~ do not skip or massage for less than 5 minutes! plus…it softens your hands, just do it}

3. Drizzle it with fresh lemon juice, top with the bell pepper and hemp seeds {again, I used ground flaxseed}, and toss to combine.

4. Just before serving, sprinkle with grated parmesan.

The longer the salad sits, the more flavor it picks up. Keep covered in the fridge for up to 3 days, giving it a toss now & then to keep the bottom from getting soggy. 

Seriously delish. This is going to become a new salad staple for me. I’m also interested in trying these 16 healthy meals.
